The Research Activity Of “Consorzio Of Parmigiano-Reggiano Cheese”

Reggio Emilia, 15th June 2009 – “ The tecnical-scientific research about Parmigiano-Reggiano cheese in the Consortium of protection activity from 1995 to 2008” is the title of the book that will be presented in the Ariosto room at the Best Western Premier Classic Hotel, via Pasteur 121/C in Reggio Emilia, in the 16th of June at 9,30. This meeting, organized by Consorzio of Parmigiano-Reggiano cheese thanks to the financial support of Emilia-Romagna, wants to underline the work of analysis and research made by the Consortium during these years, to improve and protect the quality of “King of cheeses”. During the conference will be described the guide line followed in the last decade, that range from deep study of productive process, to analysis of compositive, sensorial and nutritional features, till the innovation that can be applied to production.
