Guided tours of dairies
If you have ever wondered why Parmigiano-Reggiano has been considered the King of Cheeses for nine centuries, you should visit a production dairy.
During the journey to the dairy, you will see the landscape prevalently characterised by wide expanses of cultivated fields, with dark and fertile soil studded with farms. You will begin to understand that this is what makes Parmigiano-Reggiano unique: the extraordinary tie between the cheese and its land of origin.
This is proven by the ancient cheese houses, better known as dairies, which, towards the end of the 18th century, had an octagonal layout specifically designed for processing milk.
Modern dairies use technical, structural and installation solutions to rationalise production in line with the exclusive production processes of Parmigiano-Reggiano, established by its Production Regulation.
These are the premises where the milk from the farmers arrives. This high quality milk has special cheese making properties and characteristics, determined by the feeding of cattle, which is determined by the relevant regulation.
