Milk production and its processing into cheese, the minimum 12 month maturation period, and packaging take place exclusively in the provinces of Parma, Reggio Emilia, Modena and Bologna on the left bank of the river Reno, and the province of Mantua on the right bank of the Po. The unique qualities of Parmigiano Reggiano all stem from these deep roots and careful safeguarding of this environment.
