Baked Parmigiano Reggiano croquettes

8.5 fl oz/250 ml Milk
4.4 oz/125 g Flour
3.9 oz/110 g Butter
3.5 oz/100 g Parmigiano Reggiano
4 Eggs
Salt & Pepper
Nutmeg

Preparation
Melt the butter with the milk, bring to a boil, then add the flour, stirring quickly. Add the eggs, mix, and finally add the grated Parmigiano Reggiano. Form knobs of the mixture, about two inches in diameter, using a pastry bag with a smooth 15mm tip. Bake in the oven at 355°F/180°C for 25 minutes, then serve hot.
