28 oz/800 g beef sirloin
3.5 oz/100 g rocket leaves
Parmigiano Reggiano shavings as needed
Extra virgin olive oil
Salt as needed
Ground pepper as needed

Preparation
Preheat a cast iron skillet over high heat and sprinkle it with a pinch of cooking salt. Once the skillet is very hot, add the meat and cook it for about 5 minutes on each side (cooking times vary according to personal preferences). When it is ready, cut the steak thinly into slices about half an inch thick. Decorate with arugula leaves and Parmigiano Reggiano shavings, and season with extra virgin olive oil, salt and pepper.
