How to cut a wheel open
With the tip of the almond-shaped knife, trace a line dividing the wheel in half across the diameter of the flat surface, down to the sides.
Cut the rind by pushing the knife about an inch deep into the cheese along the line: two almond-shaped knives are inserted at opposite ends of the diameter through the sides. These knives act as wedges, splitting the wheel of Parmigiano Reggiano in two.

How to store vacuum-packed Parmigiano Reggiano
Parmigiano Reggiano can be stored for short periods in stores at room temperature without suffering any damage.
Once purchased, it should be stored in the refrigerator to best preserve all its aromatic characteristics and ensure optimal longevity of the product.
Vacuum-packed Parmigiano Reggiano can be stored in the refrigerator at temperatures between 40-48°F. Ensure that its packaging is airtight.
How to store freshly cut or unpackaged Parmigiano Reggiano
A piece of fresh-cut or unpackaged Parmigiano Reggiano must be stored in the refrigerator between 40-48°F.
Its flavor, aroma and texture remain unchanged if stored at an optimal humidity level and far from other food (the fatty part of cheese tends to absorb other smells present in the refrigerator).
Glass or plastic airtight containers are an ideal solution, as is wrapping the cheese in food-grade plastic film.
This makes it possible to store Parmigiano Reggiano for a long time, ensuring periodically that its conditions do not change. Freezing cheese is never recommended.

Duration of storage in refrigerator
Vacuum-packed Parmigiano Reggiano can be stored in the refrigerator for several months.
Every packager includes a date on the packaging called the DMD, Date of Minimum Durability. This is different from the Expiry Date, which is final. The DMD is preceded by the wording “best before…”
After opening the pack or when buying a freshly cut piece of cheese, the instructions and suggestions on how long to keep Parmigiano Reggiano vary depending on its maturation:
- Parmigiano Reggiano aged between 12 and 18 months with a higher moisture content can be kept for about 15 days.
- Parmigiano Reggiano aged 24 months or more can be kept for about 1 month.
If some mold develops on the surface, it is possible to remove it using a knife.
