Baked Parmigiano Reggiano croquettes
Ingredients
250ml Milk
125g Flour
110g Butter
100g Parmigiano Reggiano
4 Eggs
Salt & PepperNutmeg
Preparation
Melt the butter with the milk, bring to the boil, then add the flour, stirring quickly.
Add the eggs, mix, and finally add the grated Parmigiano Reggiano.
Form knobs of the mixture of 3-4cm diameter using a pastry bag with a smooth 15mm tip.
Bake in the oven at 180°C for 25 minutes, then serve hot.
