2 radicchio heads

200 g Parmigiano Reggiano, grated

100 g mixed nuts

To prepare the Parmigiano Reggiano wafers, put a heaped tablespoon of grated Parmigiano Reggiano in the centre of a piece of baking paper and form a circle with diameter of 18-20 cm. Put each piece of paper in the microwave for a few seconds at the maximum power until the Parmigiano Reggiano cheese starts melting. If you do not have a microwave, you can use a traditional oven and cook the cheese at 180°C for a few minutes until the edges of the wafers start turning slightly brown. Cut the pears into thin slices and grill them on a hot griddle. Clean the radicchio and cut it into large pieces. Put the radicchio in a large bowl and dress it with oil and salt, add pears, nuts and honey. Finish the dish with pieces of Parmigiano Reggiano wafer.
