            Open Dairies: the King of Cheeses opens the doors of Dairies

            The Open Dairies event returns on Saturday 5 and Sunday 6 October, a weekend of discovery of the Parmigiano Reggiano world

            Reggio Emilia, 20 August 2018 - On Saturday 5 and Sunday 6 October, the great initiative by the Parmigiano Reggiano producing dairies is back Foodies of all ages will have the opportunity of taking part in the production of Italy’s most important PDO.

            Guided visits to the dairy and to the maturation warehouse, open outlets, events for children and tastings, together with the cheese makers’ passion, will provide the opportunity to enjoy a unique experience: a journey of discovery into the area of origin, lands rich in history, art and culture.

            Taking part in Open Dairies is easy: simply visit the Consortium website, www.parmigianoreggiano.it and go to the page listing the participating dairies, where you can find out about opening hours and all activities. 

            Witnessing the birth of a cheese wheel is a unique experience, as is strolling through the impressive maturation warehouses and purchasing the cheese directly from the hands of those who produce it.

            A real journey through time discovering this artisanal production method, which has remained almost unchanged for over nine centuries. Parmigiano Reggiano is produced just as it was nine centuries ago: with the same ingredients (milk, salt and rennet), with the same craftsmanship, and through a production technique that has undergone very few changes over the centuries, due to the choice of maintaining the traditional, fully natural production, without the use of additives.
