PARMIGIANO-REGGIANO AT TURIN'S SALONE DEL GUSTO FOOD FAIR 2006

The Consortium, which shares Slow Food's principles of defending the link between the territory and the autochthonous microbiological properties as a means of expressing biodiversity, is participating in the Fair to highlight the varying flavours of Parmigiano-Reggiano


Turin, 26 October 2006 - For the fifth consecutive edition, Parmigiano-Reggiano is participating as an official sponsor in the 2006 Salone del Gusto, the food fair organised by Slow Food and scheduled to take place in Turin from 26 to 30 October.
"Our presence at the fair, which we have supported from the very outset", states Giuseppe Alai, president of the Parmigiano-Reggiano cheese consortium- arises from our decision to communicate to the public the wealth of characteristics that go to make up Parmigiano-Reggiano cheese, both in terms of its nutritional values and its flavours and aromas, all of which goes down extremely well with the public at the Fair. In particular," Alai continues, "we want to highlight the fact that the cheese's sensorial characteristics, which develop considerably over the course of the maturation which is longer than that of any other PDO (Protected Denomination of Origin) cheese, are the most direct means of appreciating the extent to which Parmigiano-Reggiano can vary. It is a cheese that obtains its distinctive traits from the area where it is made by 462 cheese producers. These are distributed throughout the area of origin, from the Po river to the Apennines in an host of micro-areas and local communities. It is not possible to obtain a product such as Parmigiano-Reggiano outside of its homelands, which give it the special aromas and flavours that make this a lovingly crafted, non-standardised product".
Defending the variations in local expression, legal recognition of links with the area of origin and safeguarding the autochthonous microbiological properties as an expression of micro-diversity are themes that Slow Food and the Parmigiano-Reggiano cheese consortium have in common. The public attending the Salone del Gusto will be able to witness these defining features first hand: one of the most significant moments at the Consortium's stand (D5 - Pavilion 2) will indeed be the opening of forms made by various cheese producers, along with the presentation of Slow Food presidia linked to Parmigiano-Reggiano cheese, which will then be offered to the visitors. Through a number of guided tastings, attention will also be paid to the development of the cheese's organoleptic profile over the course of the long maturation period.
The story behind Parmigiano-Reggiano cheese is a story of men, traditions and local forms of expression. For this reason too, the Consortium will be playing host to film presentations given by the provincial administrative authorities from the area of origin in which the environmental or cultural characteristics affecting Parmigiano-Reggiano will be outlined along with the specific initiatives held to promote this cheese.
The presentation, due to get underway at midday on Friday 26 October, will feature the Slow Food movement from Emilia Romagna which, along with the provincial administration of Modena, has created an ambitious project entitled "Rezdore", for which a film narrating testimonies of country life and traditions has been produced.
To underscore the defence of Geographical Indications and products from a determined territory, the Consortium has awarded Café di Colombia the "International Parmigiano-Reggiano cheese award", set up in 2004 on the occasion of the 70th anniversary of its foundation, and this year at its second edition. The event, held just a few days ago, is recalled in one corner of the Consortium's stand which is dedicated to the event.

As in previous editions of the Fair, Parmigiano-Reggiano is also taking part in the Laboratori del Gusto (Taste Laboratories) focusing on the following themes:
* Friday 27 October, 15.00: Parmigiano-Reggiano and passito wines;
* Saturday 28 October, 15.00: Parmigiano-Reggian from the form to the grater;
* Sunday 29 October, 15.00: Parmigiano-Reggiano and Comté.
