Parmigiano Reggiano and sparkling wines: a marriage of quality

Monday, 24th November, at the Michelin-starred restaurant "Il Carpaccio" in Paris, an evening dedicated to quality aperitifs featuring Parmigiano Reggiano and sparkling wines

Paris, 30th November, 2014 - It was an evening in the pursuit of excellence on Monday, 24th November, when the King of Cheeses rubbed shoulders with the best sparkling wines from all over Europe. The event was held in Paris at the Michelin-starred restaurant "Il Carpaccio" inside the luxury hotel Royal Monceau, and it saw the participation of numerous journalists, food bloggers, and wine and dairy traders. The purpose of the evening was to investigate the characteristics that make the King of Cheeses unique, and to learn to enjoy it properly with an appreciation of the aromas that evolve during the maturing process.

On the tasting table were three ages of Parmigiano Reggiano (16, 22, and 33 months) whose characteristics were illustrated by Fabrice Gour, Parmigiano Reggiano Consortium representative in France, flanked by Michel Magada, a chef and teacher from ALMA, the international cooking school. Then the King of Cheeses' versatility in the kitchen was capitalized on in dishes prepared by Roberto Rispoli, a young Neapolitan chef who has been at the helm of the famous French restaurant for four years.

Each course was accompanied by a sparkling wine carefully chosen by the sommelier Manuel Peyrondet, a great wine industry expert who was awarded the title of "Meilleur Ouvrier de France" in 2011.
