Massimo Bottura and Parmigiano Reggiano in London

London, 26th June 2015 - This weekend, Massimo Bottura will open his much anticipated pop-up Osteria Francescana in London. Osteria Francescana was recently named the Second Best Restaurant in the World, and Bottura will be bringing a taste of his renowned dishes to Sotheby’s for just three days, on the 27th, 28th and 29th June.

As an ambassador of Parmigiano Reggiano, Massimo Bottura truly understands the King of Cheeses, its provenance, history and its taste profiles. This is exemplified in many of his dishes including ‘Five Ages of Parmigiano Reggiano’, which features a demi-soufflé of 24 month aged, a sauce containing 30 month aged, a foam with 36 month aged, and a wafer crisp of 40 month aged Parmigiano Reggiano.  

Parmigiano Reggiano and Massimo Bottura have a strong connection to the land of origin, the traditions, and to local communities in Emilia-Romagna. Following the earthquakes in the region in 2012, Bottura created Risotto Cacio e Pepe, a rich creamy risotto using shredded Parmigiano Reggiano and cream of Parmigiano Reggiano to support producers after the disaster.
